Backgrounds, sometimes referred to as walls, are the patterns seen behind the slicing action. They do not affect the gameplay in any way; they just serve aesthetic purposes (As of Update 2.0.0, backgrounds have powers that improve gameplay).
Elite Backgrounds just simply means that one has to purchase these backgrounds with 
. While there are only two Elite Backgrounds in Fruit Ninja (Storm Castle and Cherry Blossom), the free version has three additional backgrounds of elite status: King Dragon, Parchment, and Cloudy Skies. As of Update 1.9.0, this name is no longer applicable.
